AVOCADO TOAST FOR THE ULTIMATE POWER BREAKFAST

 

Aaahh, Avocados. Any time my taste buds’ Mojo are down, it’s my go to fix.

Avocados have an awesome way of enlivening any dish – salads, sandwiches, wraps, and even breakfast. But you already know that 🙂

 

Avocado toast for breakfast has made a lot of rounds lately on the news, and I’ve tried it the last two months. I confess I’m hooked! So how exactly does one get their Breakfast Mojo on with these babies?  I’ve got a quick & easy version I have on those mornings you just need to get outta the door, but everything seems to move extra slowly. (Especially you).  I also have a ‘I’m-feeling-fancy-today’ version with some crunch & fried egg thrown in for kicks.

An Avocadabra Toast

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 2 Servings & feeling superhumanly healthy that early in the AM.

Ingredients

    QUICK & EASY VERSION: I NEED TO CHOW DOWN FAST!
  • 1 ripe Avocado
  • A half-cut lemon
  • Salt
  • Crushed Chilli Flakes
  • Your favorite toast - I prefer Orowheat's Oatnut Bread.  This recipe will get you 2 slices of toast.
    I'M-SO-FANCY, YOU-ALREADY-KNOW VERSION
  • 1 ripe Avocado
  • A half-cut lemon
  • Salt
  • Crushed chilli flakes
  • 1 Egg
  • Nachos
  • Salsa Verde
  • Your favorite toast

Instructions

    QUICK & EASY VERSION
  1. Dice the Avocado to your liking - if you're hard pressed for time, I find thin, long strips are the fastest to prep.
  2. Spread the cut Avocado slices on the toast.
  3. Sprinkle with salt, chilli flakes & squeeze lemon over the cut slices.
  4. Voila! Take care not to douse the toast in lemon juice, or you'll end up with soggy toast. If you're super picky about texture, then try mashing the avocados in a bowl, then adding the salt, chilli flakes & lemon juice. Then you have a handy spread for your toast.
    I'M-SO-FANCY, YOU-ALREADY-KNOW VERSION
  1. Dice the Avocado to your liking.
  2. Take a few nachos and spread them on your toast. Nacho sizes vary brand to brand, if you find yours are too big, crush it to the size of your liking.
  3. Spread the cut Avocado slices on the nachos.
  4. Sprinkle with salt, chilli flakes & lemon juice.
  5. Now add a fried egg, cooked to your liking. For this recipe, over-easy/ sunny-side up or even medium cooked fried eggs work just fine. Here's how you make a fried egg.
  6. Top your creation with some Salsa Verde.

Nom! Nom! Love the two versions. The first one actually works really well on crackers, too! Tried it last evening. Handy to have on hand for guests! 🙂
