Chocolate Molten Lava Cake

Sometimes, you need to disconnect yourself from the world & take a break.

You can do this by going outdoors on a rewarding hiking trail; or lose yourself in urbanscapes like breweries, museums, parks.

How do you cut loose though, when both options are exhausted and you’re too tired to go out? Maybe you’ve been running behind your kids all day or maybe you’ve traveled non-stop for work. Sometimes you need a quiet night in, with your sweatpants, a movie & your couch. What helps you reach the zenith of zendom in such a moment?

Dessert, my friend. Specifically, chocolate dessert. Molten Lava Chocolate dessert.

The name’s chocolate. Molten Lava Chocolate.

What I love about this cake is, it’s not overwhelmingly sweet. You know, the kind that makes you feel like you’ve instantly contracted diabetes (I’m looking at you, Double Chocolate Fudge Caramel Brownie Sundae). The petite size of these cakes are a win too, the portions are not so huge they could feed an army (I’m looking at you again, Double Chocolate Fudge Caramel Brownie Sundae). These cakes are great to serve for dessert over a dinner party of many or just one 🙂

Here’s my take on a simple but effective recipe from Ree Drummond of Food Network. I add orange zest, and it really cuts down on the sweet and elevates the chocolate. You’ll see melting chocolate ooze from a soft, spongy, delicately decadent, divine cake, oh la la, this must be food Mojo!


Chocolate Molten Lava Cake

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 4 chocolate lava cakes & heavenly choco-coma


  • 4 custard cups or ramekins
  • Baking spray
  • 1/2 cup or 8 Tbsp Unsalted Butter
  • 2 ounces bittersweet chocolate
  • 2 ounces semi-sweet chocolate*
  • 1 1/4 cups powdered sugar
  • 2 whole eggs
  • 3 egg yolks
  • 1 teaspoon vanilla or if using fresh vanilla beans, 2 inch vanilla bean
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon orange zest


  1. Pre-heat the oven to 425 degrees F.
  2. Spray the custard cups/ramekins with baking spray.
  3. In a large bowl, microwave the butter, bittersweet chocolate and semisweet chocolate on high for 1 minute.
  4. The butter will be slightly melted, whisk until all the chocolate is melted.
  5. Try not to eat this, no matter how good it looks. And its delicious, but self-control, now 🙂
  6. Whisk in the sugar till well blended, then add the eggs and egg yolks and the vanilla.
  7. Now stir in the flour; add orange zest. Your batter is ready! Pour into custard cups.
  8. Bake for 13 minutes, until the sides are firm and the centers are soft.
  9. Let stand 1 minute. Invert on dessert plates while warm & dust with powdered sugar
  10. Top off your creation with a scoop of Vanilla or Rocky Road ice-cream. If you really want to go all out, drizzle some raspberry sauce on the cake.


Voila! Fresh from the oven – hot, rich, not too sweet, spongy cake with bubbling, melting chocolate & cold ice cream right out of the freezer + A glass of your favorite wine (or a glass of milk) = Quality You-time.
